Kbosh Crust



Chocolate Mint Moon Pies




St. Patrick's Day is almost here, which means 
spring is just around the corner. These moon pies are the perfect springtime treat. The mint and chocolate combination is a delicious dessert everyone in the family will love, but the low-carb Chocolate Zucchini Kbosh Crusts make them a keto-friendly, guilt-free option!



Ingredients for Two Moon Pies

1 Package Chocolate Zucchini Kbosh Crust
8 ounces cream cheese
1/4 cup powdered monk fruit
1/2 tsp vanilla extract
1/4 tsp mint extract
2 TBS heavy whipping cream
1 ripe avocado
1/2 cup sugar-free 72% cocoa




Directions


Using a cookie cutter, cut 4 circles out of the Kbosh Crust.

In a food processor, combine cream 
cheese, monk fruit, heavy cream, vanilla extract, mint extract and 2 TBS avocado.
Blend until creamy.


Place crusts in the bottom of a silicone cake pan. Scoop cream cheese filling on top of the crusts. Place second crust on top of the filling. 

Freeze for 3 hours. 



Place the remaining cream cheese 
in a pastry bag and decorate the top 
of the crusts. Sprinkle chocolate 
chips over the top.






Kbosh Chocolate Zucchini Crust 
No Bake St. Patrick's Day Cupcakes 
with Purple Sweet Potato Frosting


These adorable mint, no-bake 
cheesecake cupcakes are topped with 
purple sweet potato frosting. 


Ingredients 
makes 6 cupcakes

1 package Chocolate Zucchini Kbosh Crust
8 ounces cream cheese
1 avocado
1/4 tsp mint extract
2 TBS heavy whipping cream
1/2 tsp vanilla extract
1/2 cup powdered monk fruit


Directions

Line each muffin cup with 
Kbosh Chocolate Crust. 

In a food processor, combine cream 
cheese, monk fruit, heavy cream, vanilla extract, mint extract and 2 TBS avocado. Blend until creamy.


Scoop cream cheese filling in 
each muffin cup. Freeze for 4 hours.



Purple Frosting Recipe
1 can full-fat coconut milk
8 ounces purple sweet potatoes
1/2 cup powdered monk fruit
1 tsp vanilla extract



Chocolate Mint Oreo Bars



These Chocolate Mint Oreo Bars 
combine two favorite sweet flavors without the sugar.  They're a delicious low-carb 
snack or dessert and they're beautiful for a 
St. Patrick's Day party!


It's easy to make these yummy bars with just a few simple ingredients!

1 Package Chocolate Zucchini Kbosh Crust
8 ounces cream cheese
1/4 cup powdered monk fruit
1/2 tsp vanilla extract
1/4 tsp mint extract
2 TBS heavy whipping cream
1 ripe avocado
1/4 cup sugar-free Lily' dark chocolate chips


Directions

In a food processor, combine cream 
cheese, monk fruit, heavy cream, vanilla extract, mint extract and 2 TBS avocado. Blend until creamy.


Cut crust to fit the bottom of a silicone brownie or cake pan. Place crusts inside the pan. If you don't have a silicone pan, line a non-stick pan with parchment paper. Spread cream cheese filling on top of the crusts. Top with chocolate chips.

                               
Freeze for 3 hours. Run a sharp knife under hot water and slice.
