St. Patrick's Day is almost here, which means
spring is just around the corner. These moon pies are the perfect springtime treat. The mint and chocolate combination is a delicious dessert everyone in the family will love, but the low-carb Chocolate Zucchini Kbosh Crusts make them a keto-friendly, guilt-free option!Ingredients for Two Moon Pies
1 Package Chocolate Zucchini Kbosh Crust
8 ounces cream cheese
1/4 cup powdered monk fruit
1/2 tsp vanilla extract
1/4 tsp mint extract
2 TBS heavy whipping cream
1 ripe avocado
1/2 cup sugar-free 72% cocoa
Directions
In a food processor, combine cream
Blend until creamy.

Place crusts in the bottom of a silicone cake pan. Scoop cream cheese filling on top of the crusts. Place second crust on top of the filling.
Place the remaining cream cheese
in a pastry bag and decorate the top
of the crusts. Sprinkle chocolate
chips over the top.
