Keto Quiche made with Kbosh Crust

Quiche is one of the most popular brunch dishes of

all time and these egg-based, addictively delicious savory dishes can now be enjoyed on the keto diet when prepared with Kbosh Crust. This classic French favorite, filled

with smoky bacon, gooey cheese and vegetables sautéed in butter, make this dish quintessentially keto. 



Keto Quiche Lorraine 

with Zucchini Kbosh Crust


This recipe is not only delicious, high in healthy fat and low in carbs, but it's super simple to make. 


Ingredients


1 Kbosh Zucchini Crust

1 TBS plus 1 tsp butter

6 eggs

4 slices no-sugar added bacon

1/4 cup green onions, sliced

2 cups fresh spinach leaves

1/4 cup shredded cheddar cheese

2 TBS heavy cream

1 tsp olive oil

1 tsp Herbs de Provence


Directions

1 - Place the Kbosh Zucchini crust in the bottom of a greased 9-inch pie dish (use 1 tsp melted butter to grease the pie dish) and bake for 10 minutes at 350 degrees.

2 - While the crust is baking, cook the bacon strips until well done. 

3 - Allow the bacon to cool a bit and, using kitchen shears, cut the bacon into little bite size pieces.

4 - Sauté the spinach and spring onions in a dime-size of oil and 1 TBS butter until just wilted.

5 - In a mixing bowl, add eggs, cream, cheese salt and pepper and whisk together.

6 - Pour the egg mixture into the crust

7 - Disperse the wilted spinach and onions evenly over the top of the egg custard mixture

8 - Disperse the bacon bits over the mixture evenly

9 - Bake for 35 minutes

Garnish with more green onions and a dash of herbs de Provence seasoning (optional)





Allow to cool before slicing & serving.







Serve with Fresh Wilted Greens 


























Mini Mushroom & Spinach Quiche






Ingredients

1 Kbosh Zucchini Crust, divided into 3 mini crusts

1 TBS butter

1/4 cup scallions, sliced

1 cup sliced mushrooms

1 cup ripped spinach

1/2 cup shredded cheddar cheese

4 large eggs

1 TBS coconut milk (or heavy cream)

1 tsp salt

1/2 tsp pepper



Using a biscuit cutter or knife, cut crust into smaller crusts to fit silicone molds or large muffin tins

Spray mold or tin with cooking spray

Place crusts inside and bake for 8 minutes in a 350-degree oven



In a mixing bowl, add eggs (whisked), salt, pepper, milk or cream, spinach and cheese and mix

Pour mixture into the baked crusts


Sauté mushrooms and green onions in butter 

& add to the egg mixture in crusts evenly


 Bake for 25-30 minutes in a 350-degree oven


Serve over a bed of wilted or fresh greens
