Morocco is an extraordinary country of vibrant cities, diverse landscapes and unique cuisine. While there's nothing like eating at a rooftop Moroccan cafe, it's possible to enjoy these dishes right in your own home and it's also possible to eat them on the keto diet.

This classic spice is featured in many Moroccan dishes. There are countless combinations of ingredients, but the ones found in most authentic Moroccan delicacies are

Ras en Hanout actually means
"TOP SHELF,” because it is a combination of the most flavorful spices.

1 tsp ground cumin
1 tsp ground ginger
1/2 tsp turmeric
1/2 tsp smoked paprika
3/4 tsp freshly ground black, white and/or pink peppercorns
1/2 tsp cinnamon
1/2 tsp cayenne pepper
1/2 tsp Allspice
1/4 tsp ground cloves

KBosh Keto Crust "Pita Chips"
Ingredients

Meat
1 pound chopped beef, chicken or lamb
4 KBosh Crust
1 1/2 tsp Ras en Hanout
1 TBS olive oil
1 tsp salt
2 cloves garlic
2 mini peppers, red and orange, sliced
1 jalapeno pepper

2 garlic cloves, sliced
1 TBS chopped cilantro and parsley
1/2 tsp lemon zest
Garnish
1/2 cup garbanzo beans
1/2 cup olives
Lemon Sllices
1/2 cup Hummus
Fresh Herbs

In a large skillet, add oil, ground meat, peppers, onion, garlic, seasoning, salt, and herbs
Saute until meat is browned

Skillet Moroccan Chicken
Ingredients
1 1/2 pounds boneless chicken breast
3 TBS extra virgin olive oil
2 tsp Ras en Hanout
zest of one lemon and juice of one lemon
kosher salt & pepper

1 yellow onion, chopped
1 inch fresh ginger, grated
3 cloves garlic, minced
1 cup chicken broth
1 cup cherry tomatoes, halved
1 cup fresh basil leaves, roughly chopped
2 TBS balsamic vinegar
2 TBS toasted pistachios
1/2 cup crumbled feta cheese
Directions
Step 1
Rub chicken with 1 TBS of the olive oil, spice blend, salt and pepper and lemon zest
Step 2
Add chicken to a large skillet and sear on both sides until golden brown and remove from pan
Step 3
Add remaining 2 TBS oil to pan
Add onion and cook 5 minutes until translucent
Add ginger and garlic and cook another minute
Reduce heat and add chicken broth and lemon juice
Step 4
Add chicken back to the pan and cook another 10-15 minutes until chicken is cooked
through

Transfer skillet to the oven and roast for 5 minutes

In a bowl, add pistachios, basil, vinegar and tomatoes

Remove skillet from oven and spoon the vinegar mixtire over the chicken

Top with crumbled feta and any extra sauce from the pan
Moroccan Chicken with Roasted Vegetables
4 each, chicken thighs and drumsticks
1/2 medium eggplant, sliced
1 red onion, cut into wedges
1/2 cup cherry tomatoes, halved
1 small zucchini, sliced
1/4 cup green olives
Marinade
2 TBS olive oil
2 TBS Ras en Hanout
2 cloves garlic
2 TBS lemon juice
1 tsp salt
1 tsp pepper
Step 1
Pre-heat oven to 400 degrees
Step 2
Chop Veggies and mix into 1 TBS of the oil
Step 3
Mix the Spices, 2 TBS oil, garlic, salt, pepper and lemon juice and add the chicken and marinate in the fridge for 30 minutes
Step 4
Place the chicken on a parchment lines sheet pan and roast for 25 minutes
Step 5
Turn the chicken over and add the veggies to the pan and cook for an additional 20-25 minutes until chicken is fully cooked
Garnish with slivered almonds and chopped parsley or cilantro
Roasted Brussels Sprouts

Ingredients
1 1/2 pounds mini brussels sprouts, halves
3/4 tsp kosher salt
3 TBS good olive oil
1/2 tsp pepper

Directions
Mix all of the ingredients in a bowl and toss to coat the brussels sprouts
Place on a parchment lines baking sheet and bake for 34-40 minutes, turning halfway through
Keto Hummus
Ingredients
1 can garbanzo beans
1/2 cup tahini
1 TBS lemon juice
1 TBS olive oil
paprika
garnish with paprika, olive oil, pine nuts and / or pistachios
