The Keto Diet can be a fun and delicious new way of life, and once you've gotten into ketosis, you'll enjoy seeing the numbers on the scale start to go down! That's the sweetest gift of this diet!  But, even though it might not be a daily addition a keto meal, the one question we all eventually do ask is...
What's For Dessert?
The great news is there are many answers to that question. Though it's probably not a great idea to eat dessert every day, or after every meal, there are several amazing choices that, when used in moderation and in keeping with a daily macro count, do fit right into the keto lifestyle.  One thing to realize is that it's a matter of swapping. Juts like you've begun to change the way you think about eating in general.... that we eat to live; we don't live to eat... anymore, we can also learn to change the way we bake! Swapping sugar for Swerve or Almond Flour instead of All Purpose Flour are two such examples. Once you've learned some of these tricks of the trade, 
 keto life gets sweeter every day!

Try these Decadent Keto Desserts made with Kbosh Dessert Crusts and Find Out!

Chocolate Lasagna

Bottom Layer
2 KBosh Chocolate Zucchini Crusts

Cream Cheese Filling
Ingredients
1 - 8 ounce package full fat cream cheese
1 cup plus confectioners Swerve (Erythritol)
1/2 tsp vanilla extract
(or make your own *Vanilla Keto Sugar... see recipe below)
Directions
Melt Cream Cheese in Microwave for 30 seconds, moosh with a fork
Add cheese,  Swerve and vanilla to stand mixer and blend using Paddle Attachment

Chocolate Pudding Filling
Also Great on it's Own!
Ingredients
1 cup canned Organic Coconut Cream - Trader Joe's Organic Coconut Cream
3 1/2 ounces Dark Chocolate - Trader Joe's Extra Dark Chocolate or any unsweetened 90% cocoa bar - broken into small pieces
1/4 cup granulated Swerve (Erythritol)
1/4 tsp vanilla extract
1 pinch salt
Directions
Heat coconut cream in a medium saucepan on medium heat
Slowly add chocolate pieces
Add Swerve
Stir Slowly1-2 minutes
Remove from Heat and Pour into Mixer and Beat until soft and creamy

Whipped Cream Layer
Ingredients
1/2  Cup Heavy Whipping Cream
2 TBS Swerve
1/4 tsp vanilla extract
(or make your own *Vanilla Keto Sugar... see recipe below)
A few Drops of Lemon Juice
Directions
Whip all ingredients in a stand mixer using the beater 
attachment until soft peaks are achieved

1 package Dark Chocolate Lily's Chocolate Chips

Prepare the Lasagna
Cut crusts to fit lasagna pan
Layer one layer of cream cheese filling
Then add pudding layer
layer whipped cream 
Top with Lily's chips

Place lasagna in Freezer for 20 minutes


Other Ways to Use Chocolate Zuchinni Crust

"Oreo" Triffle
Layer the ingredients in a large glass bowl
Crumble the Chocolate Crust in bits for the bottom layer
Add a layer of *Whipped Cream  
Add another layer of chocolate
Add another layer of whipped cream
Sprinkle the remaining crumbled crust over the top layer 

*For the Whipped Cream
Mix Heavy Whipping Cream and Erythritol in a Stand Mixer using Beater Attachment

Keto Cannolis 
First,  Make the Cannoli Cream

Ingredients
2 cups Whole Milk Ricotta Cheese
1/2 cup Swerve (plus 1 TBS)
1/4 tsp Vanilla
1 cup Heavy Whipping Cream

Directions
Combine Cheese with 1/2 cup Swerve and Vanilla in Mixer, Blend and Remove
Using Beater Attachment, whip Heavy Cream and 1 TBS Swerve 
Fold Cheese Mixture into Cream

Chocolate Cannoli
Roll the cream inside a Chocolate Crust
Dip the Ends into your Favorite Shaved Keto Chocolate

Strawberry Cannoli
Spread keto friendly jam
 and layer the cream inside a Dessert Crust 
top with whipped cream!


Classic Chocolate Chip Cannoli
Roll the cream inside a Dessert Cauliflower Crust
Dip Ends in Lilly's Chocolate Chips
Sprinkle Confectioners Swerve Over the Top!


Ice Cream Sandwiches


Ingredients
Chocolate Zucchini Crust
Your Favorite Keto-friendly Ice Cream (Rebel or Enlightened Keto)
Directions
Using a biscuit cutter, cut 2 even circles out of Chocolate Zucchini Crusts
Freeze Ice Cream and Cut Equally Sized Circles to Fit Crust
Wrap in Wax Paper & Freese for 30 minutes


Fruit Pizza
Prepare a Dessert Cauliflower Crust 
According to Package Directions



Prepare Cream Cheese Filling

Ingredients
4 ounces full fat cream cheese
2 TBS Swerve (Erythritol)
1/4 tsp vanilla extract
Directions
Melt Cream Cheese in Microwave for 30 seconds
Add cheese, Swerve and vanilla to stand mixer 
Blend using Paddle Attachment
Spread Cream Cheese Filling all over the Dessert Cauliflower Crust


Create Your Own Pizza Masterpiece Using Keto Friendly Fruit
Blueberries, Strawberries, Raspberries, Blackberries


Keto Philly Cheesecake


Ingredients
2 Dessert Cauliflower Crusts
2 TBS Melted Butter
2 - 8 ounce Philadelphia Cream Cheese
*2 cups Vanilla Eryhtritol (recipe below)
2 Eggs

Directions
For the Crust...
(Side note: You can either lay the crust on the bottom of a pie pan or crumble it up and mix in melted butter like you would make a regular crust. I tried  it both ways and personally, I like the crumbles for this recipe. Try it yourself! Both taste amazing!)

For the Custard Filling
Melt the cream cheese in microwave
Add the cheese, *vanilla keto sugar (or erythritol and vanila extract) and eggs  in Stand Mixer and Blend until creamy
Pour Custard into Crust
Bake at 350 degrees for 35 minutes
Another Option -  use Pumpkin Crust for a Pumpkin Cheesecake!

*Vanilla Keto "Sugar"
Keep some of this deliciousness in a ball jar for keto baking, coffee and tea...
 It's amazingly simple, but a bit time consuming.
Scrape the beans out of their pod.
Place the beans and Erythritol in a coffee or spice grinder and blend
Place the mixture in a ball jar, along with the vanilla bean and cover
Store in a cool, dry and dark place. It takes about two weeks but it's worth the wait!
